Driving Lessons in So'ton

So, the Mrs has finally decided (at the age of 26) to start driving. Because she works full time, she needs to do these around her 9-5. We've tried Googling companies/instructors but everyone we have spoken to is fully booked. Does anyone know of anyone fully qualified, who they recommend trying?
