LOVE the Irish Coffee at Pizza Express but have never thought to ask how they make it... somehow the whipped? cream stays icy cold on top of the piping hot coffee.... also the coffee tastes slightly sweet, do they add sugar?.. but this might be the whiskey or the cream. and last but not least, is it whisky or whiskey? have changed spellings in this post back and forth about three times now! Whisky (uisge) is the more common and accepted spelling, but you will find the additional 'e' here and there. Single Cream (not whipped) should be added by pouring over an upturned, heated teaspoon. Give it to Ron Posted 19 September, 2012 Share Posted 19 September, 2012 Put a large spoonful of demerera sugar at the bottom of the glass, put in the whisky then the coffee, pour in the cream-double whipped is good onto the back of a spoon - slowly. If you dont take sugar you will have to put in that whippy stuff from the can ;-) its what we used to do at the Berni Inn I worked at years ago. Using squirty canned cream is a bit of a cheap lazy way of doing it, and tastes carp. I would have a bit of an experiment, worst that will happen is that you will be up all night getting smashed drinking a more artistic Jaeger bomb: certainly tastes better. To get the perfect floater make sure that the upturned tea spoon is touching the inside of the glass just above the coffee and poor the cold double cream on very slowly.
