You need a big pan, and a milk thermometer, as it is so important not to over or under heat.... do not go over 115 degrees!! The Cat Posted 8 February, 2012 Share Posted 8 February, 2012 Peanut butter fudge is nice, and dead easy. No need for a thermometer either: 125 g butter 500g dark brown sugar 120ml milk 250g peanut butter 1 vanilla pod, seeds only 300g icing sugar Melt butter in pan Add brown sugar and milk, stir. Bring to boil for 2 to 3 minutes without stirring Remove from heat, stir in peanut butter and vanilla seeds Put icing sugar into bowl, pour hot butter and sugar mix on top. Then I made the fatal mistake, put it under the cold tap to wash out the saucepan. Had to chuck the saucepan and buy a new one. The 'fudge' was like concrete.
