Heard last night that all dead animals need to be cremated.

 

If so, do I dig it up?

Hope it isn't, or I'll have to dig up 4 cats, 4 rabbits, 2 hamsters, a chicken, and a border collie ! The only issue when the pony died was that I wasn't willing to dig that big a hole, so called a knacker to take him away.

Did you run it over in the Forest then decided to hide the evidence by getting it home and burying it under the Rhubarb, hence not knowing if it was a Horse or a Pony?

There is a way to get rid of horses without burying or cremating them, but it takes a lot of flushes. I'd just leave it be TBH and let the vultures take care of it.
