Seany S Posted 12 January, 2010 Share Posted 12 January, 2010 I like to make chicken stock from the carcass of a roast chicken, with some celery, a clove or two of garlic, an onion chopped, a carrot, a bouquet garni of thyme, sage and bay, some peppercorns and a sprinkling of Maldon sea salt. Pour over a glass of white wine and a few pints of water, bring to the boil them simmer for 40 mins. Strain the clear liquid and cool, you can then freeze it or whatever.
