I went at the weekend but don't remember seeing much of the city.

I saw George Burley in Marks and Spencer in Edinburgh. FACT

I went once, for a day.

 

Likewise, I remember nothing.

Edinburgh is nice, castle is good, parks are good, shopping is good. Espcially around the festival time, it is worth going. So many things to see when it's on.
